I've been writing wine lists and buying wine for restaurants for years now and I would still be considered a very young man in this business. I've watched peoples faces light up as I share something new with them thousands of times. These are my experiences. This is my insight on trends, tricks, and treats available to the public. Barnyard: A funky wet hay/manuer smell commonly found in great french wines from burgundy to the south of france. Think of a great stinky cheese you once enjoyed.
Cork Dork: The new school of wine lovers/wine workers self proclaim their own titles
Flinty: Remember the flint you would light your bunsen burner with in chemistry class. It would spark and leave a flinty smell.
Jammy: Think of all berry preserves or any kind of jam. Now take out the sugar and think soley or the fruit profile and the weight of the jam. There you are.
Juicy: When a wine has fruity or sweet charactaristics with a nice weighty texture
Silage: Fermented fodder/hay found in a silo.
Tannins: Make you pucker in the jowls. Tanins come from the skins of grapes and oak barrels.. or if you're really curious tea has them too!
Tar/Asphalt: Literally that. Summer time as roads are repaved with asphalt and tar that smell that lingered in the air as you slowly drove by the pavers.
Wet stone: For me the smell of the moist air near a small waterfall in the middle of a forest. That clean lightly minerally smell.
